Guinness Gingerbread Cake...

This is the second year I've made this cake and after tonight's reception I'm pretty confident it's here to stay as part of the post tree decorating celebration. Don't be shocked if you find yourself having two pieces and somehow smiling and nodding "yes" when your kids ask for a third (It was the whipped cream talking, I'm pretty sure.)




Guinness Gingerbread

In a sauce pan over low heat, stir the following ingredients until melted and combined:

10 tablespoons unsalted butter
1 (11 oz.) jar Lyle's Golden syrup
1 cup, plus 2 tablespoons dark brown sugar
1 cup Guinness beer
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/4 teaspoons ground cloves

Combine the following in a bowl and add to wet ingredients, mixing well to remove all lumps:

2 cups all purpose flour
2 teaspoons baking soda

Combine the last two ingredients in a bowl and add to the mixture and stir or wisk until well incorporated:
1 1/4 cup sour cream
2 eggs

Pour into a greased or buttered 9x13 inch pan and bake at 325° for about 45 minutes or until toothpick test comes out clean.

Cool before cutting.  (We like ours still a little warm from the oven and topped with fresh whipped cream.)
